"It's so FLUFFY!" Pancakes

Rise and shine everyone! You know that pancake mix in your pantry? Throw it out NOW! (Actually use the rest of it and throw it out because we don’t waste food over here.) I’ve got an INCREDIBLE recipe for light and fluffy pancakes that is sure to satisfy your sweet tooth. I was craving pancakes this morning but was unfortunately out of my Hungry Jack pancake mix. This was the first recipe I saw when I googled "Fluffy pancakes" and I'm so glad I chose it. It was super easy to make and it was gone almost immediately after I was done preparing it.

You can substitute lemon juice for the white vinegar if you don't have that on hand or use actual buttermilk.

Feel free to add chocolate chips, blueberries, lemon zest, etc... Anything you want to jazz it up! There are no rules here.
