Nonna Luna's Shrimp and Rice
I first saw this dish in 6th grade when I was watching Food Network after school. I was tuning in to one of my favorite shows, Giada at Home, and saw her cooking with her grandmother. The dish looked so good at the end of the show that I begged my mother to take me to the grocery store so that we could get all the ingredients to make it. I like this dish because it's incredibly delicious without being too rich. Definitely one of my go-to meals.

Jordan's Black Beans, Rice, and Plantains
In March I visited Miami and I was exposed to the wonderful world of Latin American and Caribbean cuisine. I became obsessed with eating rice, beans, and plantains and I constantly had to get my fix. Because I was moving to Pittsburgh, and I was unsure about the Latin American food scene, I decided to learn how to make this meal myself. I developed a recipe by watching countless youtube videos and figuring out the easiest way to prepare this dish. I cannot even begin to express to you guys how good this meal tasted. The beans were extremely flavorful and the plantains perfectly complimented the meal. I enjoy eating this with some slices of avocado as well. Also, this meal is VEGAN so there's another reason to get excited about this recipe. Until I actually write down how I made this, I will link some of the tutorials I watched to develop the recipe:

Teriyaki Salmon with Balsamic Roasted Brussel Sprouts
This is a great dish if you want to break away from the monotony of chicken and beef. The teriyaki sauce is a little on the thin side so I recommend adding some cornstarch and heating up in a pan for 7-8 min to thicken it. To make the brussel sprouts, half them, toss them in oil, seasoning salt, brown sugar, and balsamic vinegar to taste. Bake in a 400 degree oven for 20 min.
Southwestern Black Bean Burgers
I've recently gotten into black bean burgers and find myself liking them even more than beef. Black bean burgers tend to be more seasoned when compared to traditional burgers. I recommend roasting the black beans in the oven a little to remove the moisture. This will prevent your burger from having that mushy texture. I also added frozen corn and grated bell peppers to the mixture since that adds some additional texture elements. I topped the patty with pepper jack cheese, sriracha mayo, a mashed avocado, and a toasted kaiser bun.


Red Coconut Chicken Curry
Ok, so I know it's not the color red but I promise you, I used red curry paste! This was a recipe I developed myself after I was craving Thai food but couldn't find any Thai places near me. I decided to google a bunch of recipes and then I created one based on my tastes. You definitely do not need to follow this recipe as written. Feel free to get creative with the vegetables and spices you add. This is a good and hearty meal to have when it's cold outside and is a nice change of pace from soups and stews. I recommend serving this with white rice if you want your curry to last longer.
