Red Coconut Chicken Curry

Ok, so I know it's not the color red but I promise you, I used red curry paste! This was a recipe I developed myself after I was craving Thai food but couldn't find any Thai places near me. I decided to google a bunch of recipes and then I created one based on my tastes. You definitely do not need to follow this recipe as written. Feel free to get creative with the vegetables and spices you add. This is a good and hearty meal to have when it's cold outside and is a nice change of pace from soups and stews. I recommend serving this with white rice if you want your curry to last longer.
